Here’s a speedy version of a diner favourite. Just go to the deli counter and buy rare roast beef—ask for it sliced extra thick.

Ingredients
Raw egg
4 large
Egg whites
4 serving(s), large
Club soda
1½ fl oz, 3 Tbsp
Deli style roast beef slices
8 oz, thickly sliced*
Table salt
⅛ tsp(s), or to taste
Black pepper
⅛ pinch(es), freshly ground, or to taste
Steak sauce
3 tbsp(s)
Instructions
1
Coat a large nonstick skillet with cooking spray and set pan over medium heat. In a medium bowl, whisk together eggs and eggs whites with club soda until frothy.
2
Cook eggs until underside is firm and then fold into an omelette to finish cooking, about 2 to 3 minutes; remove eggs from skillet and cover to keep warm. Add roast beef to skillet and cook until warmed through, about 1 to 2 minutes.
3
Cut omelette into quarters and season with salt and pepper; serve each omelette quarter with 55g (2 oz) of roast beef and 12ml (2 1/2 tsp) of sauce.
