Experiment with other herbs for this dessert. A teaspoon of fresh minced rosemary gives this dish a woodsy flavour; and a teaspoon of chopped lavender.

Ingredients

strawberries

2 cup(s), raw, freshly sliced

fresh blueberries

diet soda

1 fl oz

mint leaves

1 Tbsp, fresh, chopped

fat-free ricotta cheese

lemon zest

fat free sour cream

Instructions

  1. Toss strawberries, blueberries, 2 tablespoons of soda and mint together in a bowl; set aside for 10 minutes. Spoon into 4 serving bowls.
  2. Meanwhile, combine ricotta, remaining 2 tablespoons of soda and lemon zest in a bowl. Whip with a hand-held mixer until light; stir in sour cream. Divide ricotta cream over each serving. Yields about 3/4 cup of berries and 1/3 cup cream per serving.
