Spiralized squash & hummus sandwich

WW 100% Whole Wheat English Muffin (SmartPoints Packaging)
Yellow summer squash
1½ tbsp(s), roasted red pepper
- Spiralize zucchini and yellow squash. In a medium pan over medium heat, heat olive oil. Add spiralized veggies to pan, season with salt and pepper and cook, stirring frequently, until just tender (approximately 6-8 minutes).
- Spread bottom half of toasted Sandwich Thins with hummus. Top with cooked zucchini and squash. Cap with toasted sandwich thins lid and enjoy!
