Lime zest

Cumin seeds

Black pepper

Beets
3 medium, peeled (about 3/4 lb)
Red cabbage
2 cup(s), thinly sliced
Uncooked scallions
2 medium, thinly sliced
Fresh oregano
3 tbsp(s), chopped
Queso cotija
6 tbsp(s), or Parmesan cheese, coarsely shredded
Oil roasted salted pepitas
3 tbsp(s), (pumpkin seeds)
Instructions

In a large bowl, whisk together lime zest and juice, oil, garlic, cumin, salt and pepper.

Spiralize beets; add to dressing.

Add cabbage, scallions and oregano to beets; toss to coat. Sprinkle with cheese and pepitas; serve.
