Ingredients

Lime zest

1 tsp(s), grated

Fresh lime juice

2 tbsp(s)

Olive oil

1 tbsp(s)

Garlic clove(s)

1 large clove(s), crushed through a garlic press

Cumin seeds

1 tsp(s), crushed

Table salt

½ tsp(s)

Black pepper

¼ tsp(s), freshly ground

Uncooked beets

3 medium, peeled (about 3/4 lb)

Uncooked red cabbage

2 cup(s), thinly sliced

Uncooked scallion(s)

2 medium, thinly sliced

Fresh oregano

3 tbsp(s), chopped

Queso cotija

6 tbsp(s), or Parmesan cheese, coarsely shredded

Roasted salted pepitas

3 tbsp(s), (pumpkin seeds)

Instructions

  1. In a large bowl, whisk together lime zest and juice, oil, garlic, cumin, salt and pepper.
  2. Spiralize beets; add to dressing.
  3. Add cabbage, scallions and oregano to beets; toss to coat. Sprinkle with cheese and pepitas; serve.
