Spinach Salad with Goat Cheese, Grapes and Honey Mustard Dressing
Apple cider vinegar
⅛ tsp(s), freshly ground
1 cup(s), red, seedless, halved
Uncooked red onion(s)
⅓ medium, or thinly sliced
¼ cup(s), toasted
Semisoft goat cheese
- To make dressing, in a large bowl, whisk together oil, water, mustard, vinegar, salt and pepper.
- Add spinach, grapes and onion to bowl; toss to mix and coat.
- Place about 2 1/4 cups salad on each of 4 salad plates; sprinkle each with 1 tablespoon almonds and 1 tablespoon cheese.
- Yields 1 salad per serving.
