Spinach-Feta Omelet

Ingredients
Olive oil
1 tsp(s)
Garlic
1 clove(s), large, minced
Fresh spinach
2 cup(s), chopped
Liquid egg substitute
½ cup(s)
Flour tortilla
1 medium, regular or whole-wheat
Feta cheese
2 tbsp(s), crumbled
Instructions

In a small nonstick skillet, heat oil. Sauté garlic until fragrant, about 30 seconds. Add spinach and cook until wilted, about 3 minutes.

Pour egg substitute over spinach to coat surface of pan; cook until edges are firm, about 2 minutes. With a spatula, flip omelet and cook until firm, about 2 minutes.

Place omelet on tortilla, then sprinkle with feta. Roll up tortilla and slice in half.
