Spinach and Cheddar Frittata
1 cup(s), fresh, baby leaves, chopped
2 Tbsp, finely chopped
low-fat shredded cheddar cheese
- Preheat oven to 200°C (400°F). Beat together eggs and egg whites in large bowl. Stir in spinach, scallion, salt and pepper.
- Coat a 30cm (12-inch) in ovenproof, nonstick skillet with cooking spray. Heat skillet over medium heat. Pour egg mixture into skillet and cook 5 minutes or until partially set.
- Sprinkle cheese over eggs. Bake until cheese softens and eggs firm up, about 5 minutes. Remove from oven and let stand 1 minute before cutting in 8 wedges. Yields 2 pieces per serving.
