Need dinner in a flash? Try this cheesy frittata made easy with store-bought shredded cheese and a bag of pre-washed spinach (just rinse at home).

Egg white(s)

2 egg white(s), large

Fresh spinach

1 cup(s), fresh, baby leaves, chopped

Uncooked scallion(s)

2 tbsp(s), finely chopped

Low-fat shredded cheddar cheese

  1. Preheat oven to 200°C (400°F). Beat together eggs and egg whites in large bowl. Stir in spinach, scallion, salt and pepper.
  2. Coat a 30cm (12-inch) in ovenproof, nonstick skillet with cooking spray. Heat skillet over medium heat. Pour egg mixture into skillet and cook 5 minutes or until partially set.
  3. Sprinkle cheese over eggs. Bake until cheese softens and eggs firm up, about 5 minutes. Remove from oven and let stand 1 minute before cutting in 8 wedges. Yields 2 pieces per serving.
