Spicy tuna in a tangy, peanuty dressing with a hint of sesame. The fresh flavour of cucumber, cilantro and scallions balance out the dish.

Ingredients

Fat free chicken broth

cup(s), reduced-sodium

Low sodium soy sauce

2¼ tsp(s)

Smooth reduced fat peanut butter

2¼ tsp(s)

Sesame oil

¼ tsp(s)

Canned chunk white tuna in water

1 can(s), Clover Leaf Spicy Thai Chili Flaked Light Tuna (85 g)

Cucumber

1 cup(s), diced

Uncooked scallions

1 medium, chopped

Cilantro

2 tbsp(s), fresh, chopped

Romaine lettuce

2 cup(s), chopped

Instructions

  1. In a small bowl, whisk together chicken broth, soy sauce, peanut butter, and sesame oil. Set aside.
  2. In a medium bowl, combine tuna, cucumber, scallions, and cilantro. Toss to combine. Add dressing and toss to coat. Add Romaine lettuce and toss to coat. Serve immediately.
