Spicy sriracha-sesame carrot dip
Uncooked baby carrots
1 pound(s), chopped
Reduced calorie mayonnaise
Sriracha hot sauce
1 tbsp(s), or less to taste
Toasted sesame oil
Rice wine vinegar
2 tbsp(s), chopped (for garnish)
- Place carrots in a microwave safe dish, cover with water and cook on High power until extremely soft, 15 minutes; drain well and chill.
- Combine cooked carrots with remaining ingredients, except scallions, in a blender or food processor; process until smooth and completely blended. Serve garnished with scallions.
