Spicy Miso-Ginger Carrot Dip

Cooked carrots blend beautifully with Asian flavourings in this silky dip.

Ingredients

Carrots

2 pound(s), peeled, chopped

Miso paste

1 tbsp(s)

Toasted sesame oil

1½ tsp(s)

Ginger root

1½ tsp(s), finely grated

Garlic clove

1 clove(s), large, finely minced

Unseasoned rice vinegar

1 tsp(s)

Low sodium soy sauce

1 tsp(s)

Fish sauce

1 tsp(s)

Sriracha hot sauce

½ tsp(s), or to taste

Uncooked scallions

1 tbsp(s), chopped (for garnish) or cilantro

Instructions

Place carrots in small saucepan; add enough water to cover. Bring to a boil over high heat; reduce heat to medium-low and simmer until carrots are extremely soft, 10-15 minutes. Drain; let cool.

Puree carrots with remaining ingredients, except scallions or cilantro; garnish and serve.
