Ready in under 30 minutes, you can make this super versatile beef mixture, full of Mexican-inspired flavors. Use it during the week as a taco filling, nacho topping or inside quesadillas. Canned diced tomatoes with green chiles add a spicy kick and make the meat mixture more rich in texture. Serve over mixture greens with fresh corn kernels, black beans and chopped tomatoes for a wonderful taco salad. Top with cilantro and add a spritz of fresh lime juice to round it out.

Instructions

  1. Coat a large skillet with cooking spray; heat over medium-high heat. Add the garlic; cook, stirring, until fragrant, about 30 seconds to 1 minute. Add the beef; cook until browned, breaking up the meat as it cooks, about 5 to 6 minutes. Add the cumin, coriander, salt, and diced tomatoes; cook, stirring occasionally, until the liquid is almost absorbed, about 5 to 6 minutes.
  2. Serving size: 1/2 cup.
