The little fizziness you get from kombucha makes it a fantastic base for a mocktail, lending extra complexity and depth. Here, we springboard off a bottle of apple ‘booch (if you can find it, get Honeycrisp apple flavor for its bright essence), and add a splash of spicy ginger beer and a pinch of apple pie spice for autumnal vibes.

Ingredients

Kombucha

16 oz, apple-flavoured, chilled

Apple pie spice

tsp(s)

Ginger beer

½ cup(s), chilled

Ice cube(s)

3 cup(s)

Fresh apple(s)

½ small, thinly sliced

Instructions

  1. In a 4-cup measuring cup or small pitcher, whisk together the kombucha and apple pie spice; stir in the ginger beer. Fill each of 2 tall glasses or mason jars with 1 ½ cups ice; divide the kombucha mixture evenly between glasses. Garnish with the apple slices.
  2. Serving size: 1 1/4 cups (before ice)
