With a big batch of precooked broccoli in the fridge, you can make yourself a lightning-fast bowl of creamy, cheesy soup. Though the recipe is built to serve one, you can easily double or quadruple it to suit your needs. A pinch of cayenne pepper does wonders to enhance the cheesiness of the cheddar, so don't be tempted to leave it out.

Instructions

In a small saucepan, whisk together broth, milk, flour, salt, and cayenne pepper. Cook over medium-high heat until thick and bubbly, about 4 minutes. Stir in broccoli and scallions; cook 1 minute. Remove from heat and stir in cheddar.
