Spanish Style Poutine with Romesco Sauce

A spicy home-made roasted garlic sauce and creamy manchengo cheese top crispy baked French fries in this lightly spicy variation on poutine.

Ingredients

Frozen French fries prepared without fat

28 oz, (large bag)

Smoked paprika

1 tsp(s)

Dry roasted salted almonds

35 gm, about 1/3 cup

Roasted red peppers (packed in water)

12 oz, drained and rinsed

Garlic

1 clove(s), large

Kosher salt

½ tsp(s)

Sherry vinegar

¼ tsp(s)

Hard or semi-soft cheese

45 gm, coarse grated manchego cheese

Instructions

Bake French fries according to package instructions until crispy and browned. Toss with paprika when done. While French fries are cooking, puree roasted peppers, almonds, garlic, salt, and vinegar in blender or food processor. Bring to a boil and keep warm in a small saucepan. Serve French fries hot, topped with sauce and manchego cheese.
