Ingredients
Low sodium soy sauce
¼ cup(s)
Mirin
2 fl oz, or 1/4 cup
Unpacked brown sugar
¼ cup(s)
Ginger root
4 piece(s), 1 inch each, sliced
Uncooked scallions
4 medium, chopped, divided
Uncooked branzino (sea bass) fillet
1 pound(s), black bass, four 4 oz pieces
Cooked white rice
2 cup(s)
Instructions

In a large, nonreactive soup pot, stir together soy sauce, wine, sugar, ginger and 3 scallions. Bring to a simmer.

Lower fish into liquid and simmer for 5 minutes. Reduce heat and let sit for 5 minutes over very low heat.

Distribute 1/2 cup rice onto each of four plates. Lift fish out of poaching liquid and set one fillet on top of rice. Spoon a little poaching liquid over each, sprinkle with remaining scallions and serve.
