Southwestern Egg Salad

Ordinary egg salad gets a makeover with the addition of scallions, green chili peppers,cilantro and cumin. Add a pinch of chili pepper if you want even more flavour!


Ingredients
Hard boiled egg
6 large
Uncooked scallions
2 medium, finely chopped
Canned green chili peppers
1 tsp(s), drained, chopped
Cilantro
1 tbsp(s), fresh, minced
Red bell pepper
½ small, finely chopped
Fat free mayonnaise
¼ cup(s)
Fat free salsa
1 tbsp(s)
Cumin seeds
¼ tsp(s)
Table salt
¼ tsp(s)
Black pepper
⅛ pinch(es)
Instructions

Peel eggs; mash with a fork in a large bowl. Add remaining ingredients and mix thoroughly to coat. (Note: If desired, trim fat and cholesterol by using 2 whole eggs and 8 egg whites instead of 6 whole eggs.)

Serve egg salad in a cored bell pepper, over mixed greens or on its own in a bowl. Yields about 1/2 cup per serving.
