Alongside deviled eggs and pickled okra lies another favourite Southern dish: pimento cheese. Our version is made with reduced-fat cheddar, given a flavour boost with smoked paprika, and spooned into crispy phyllo shells. Buy the eggs already prepped or search the WW app for an easy deviled egg recipe you can make yourself.

Ingredients

Mini phyllo shells

8 item(s)

Reduced-fat cheddar cheese

¼ cup(s), shredded, sharp variety

Roasted red peppers (packed in water)

Light mayonnaise

1 tbsp(s)

Scallions

1 tbsp(s), finely chopped

Smoked paprika

¼ tsp(s)

Deviled eggs

8 half/halves

Cooked okra

½ cup(s), sliced, pickled

Uncooked cauliflower

2 cup(s), florets

Blackberries

Cooked beets

1 cup(s), homemade or vacuum-packed, cut into wedges

Wafer rye crispbread crackers

4 item(s)

Instructions

1

Preheat the oven to 350°F. Arrange the phyllo shells on a small sheet pan. Bake the shells until lightly browned and crisp, about 5 minutes.

2

Meanwhile, in a small bowl stir together the cheddar, red peppers, mayonnaise, scallions, and smoked paprika. Divide the cheese mixture evenly among the phyllo shells. Arrange the filled phyllo shells, deviled eggs, pickled okra, cauliflower, blackberries, cucumber, beets, and crackers on a large platter, board, or sheet pan. Sprinkle the mint over the beets.
