Ready in just 10 minutes, these sandwiches feature chipotle mayonnaise, a combination of chipotle chiles en adobo sauce and store-bought mayonnaise. Mixing your own ingredients into the mayonnaise, whether spicy, sweet or herbaceous, is a great way to elevate any sandwich in a snap. If the heat from the chiles is too strong, try 2 tablespoons of a smoky barbecue sauce in its place. Creamy avocado, fresh tomatoes and smoked turkey all bring great layers of flavour that kids and adults can both enjoy.

Ingredients

Reduced calorie mayonnaise

2 tbsp(s)

Canned chipotle peppers in adobo sauce

1 item(s), minced (or less to taste)

Table salt

¼ tsp(s)

Reduced-calorie rye bread

4 slice(s), toasted if desired

Plum tomato

1 medium, cut into 8 slices

Deli sliced turkey breast

4 oz, smoked-variety (4 slices)

Avocado

½ small, peeled and mashed

Instructions

In cup, stir mayonnaise, chipotle pepper, and salt together until blended. On each of 2 slices of bread, spread 1 tbsp mayonnaise mixture. Top each with tomato. Between sandwiches, divide turkey evenly.

On remaining 2 slices of bread, spread mashed avocado; place bread, avocado side down, on top of tomatoes. Cut sandwiches in half on diagonal.
