Smoked turkey sandwiches with chipotle mayo

Canned chipotle peppers in adobo sauce

4 slice(s), toasted if desired
1 medium, cut into 8 slices
Deli sliced turkey
4 oz, smoked-variety (4 slices)
½ small, peeled and mashed
- In cup, stir mayonnaise, chipotle pepper, and salt together until blended. On each of 2 slices of bread, spread 1 tbsp mayonnaise mixture. Top each with tomato. Between sandwiches, divide turkey evenly.
- On remaining 2 slices of bread, spread mashed avocado; place bread, avocado side down, on top of tomatoes. Cut sandwiches in half on diagonal.
- Serving size: 1 sandwich
