A bagel, lox, and schmear is pure comfort, but is it a feast for the eyes? Yes, if you remake it into a perky salad. Want to tame that sharp onion bite when using raw onions? Soak them in ice water, then rinse and pat dry before using.

Ingredients

Olive oil

2 tsp(s)

Fresh lemon juice

1 tsp(s)

Table salt

¼ tsp(s)

Black pepper

tsp(s), plus more for garnish

Mixed greens

4 cup(s), preferably with baby watercress

Radishes

2 medium, halved and thinly sliced

Red onion

¼ cup(s), sliced, cut into slivers

Bagel chips

1 oz, sea salt, 6 chips

Whipped cream cheese

2 tbsp(s)

Smoked salmon

4 oz, torn into pieces

Capers

2 tsp(s), drained

Instructions

  1. In a medium bowl, combine the oil, lemon juice, salt, and black pepper. Add the greens, radishes, and onion and toss to coat.
  2. Spread the bagel chips with the cream cheese. Divide the chips between 2 serving plates. On each plate, arrange 2 cups of the salad. Drape 2 oz salmon over each salad and sprinkle each with 1 tsp capers. Garnish with black pepper, if desired.
  3. Serving size: 1 salad
