These elegant and delicious canapés will have them all fooled. Not only are they easy to make but they’re super-low in SmartPoints values too!

Ingredients

Low fat cream cheese

½ cup(s), softened

Uncooked red onion(s)

medium

Fresh lemon juice

4 tsp(s)

Lemon zest

1 tbsp(s)

Kosher salt

¼ tsp(s)

English cucumber(s)

1 medium, sliced into 40 rounds

Smoked salmon

12 oz, sliced into 40 pieces

Dill

1 cup(s), leaves torn into pieces

Instructions

  1. Combine cream cheese, onion, lemon juice, lemon zest, and salt in a small bowl. Reserve. Arrange cucumber slices on a large platter, top each with one piece of salmon and 2 ml (½ tsp) cream cheese topping. Garnish with one small piece of dill.

Notes

These may be made the morning of the party, just top with lightly dampened paper towel and plastic wrap to keep them fresh.
