Slow Cooker Country Captain Chicken with Rice

The traditional version of this Southern curried classic calls for butter and oil. Our update uses boneless, skinless chicken, slow-cooked.


Ingredients
Dried shiitake mushrooms
2 cup(s), sliced
Onion
1 cup(s), chopped
Celery
½ cup(s), chopped
Garlic
1 clove(s), large, minced
Uncooked boneless skinless chicken thigh
1 pound(s), trimmed of all fat and cut into bite-size pieces
All-purpose flour
1 tbsp(s)
Fat free chicken broth
¼ cup(s)
Curry powder
1½ tsp(s)
Table salt
1 tsp(s)
Black pepper
¼ pinch(es)
Smoked paprika
¼ tsp(s)
Canned crushed tomatoes
3 cup(s)
Golden seedless raisins

Cooked long grain brown rice

Instructions

Coat a large skillet with cooking spray. Add mushrooms, onion, celery and garlic and sauté until vegetables are tender, about 5 minutes. Place vegetables in slow cooker; add chicken.

In a cup, stir together flour and chicken broth until smooth. Add to slow cooker. Add curry powder, salt, pepper, paprika, crushed tomatoes and raisins, and stir in.

Cover and cook on low for 5 hours. To serve, spoon 1/2 cup rice onto each of 4 plates. Top each with chicken and sauce and serve. Yields 2 1/2 cups chicken mixture and 1/2 cup rice per serving.
