You’ll never guess that protein-packed silken tofu is the secret ingredient in this luscious mac and cheese. Kids and grownups alike will gobble this one up!


Ingredients
Uncooked whole wheat macaroni
12 oz, or regular macaroni
Silken tofu
12 oz
Low-fat shredded cheddar cheese
2 cup(s), 2% fat
1% low fat milk
2 tbsp(s)
Salted butter
1 tsp(s)
Light sour cream
1 tsp(s)
Dijon mustard
1 tsp(s)
Table salt
1 tsp(s)
Garlic powder
½ tsp(s)
Black pepper
⅛ pinch(es)
Cayenne pepper
1 pinch(es)
Instructions

Cook macaroni according to package instructions in salted water. While cooking combine all other ingredients in a food processor or blender until smooth. When macaroni is done drain well and return to warm pan. Add tofu-cheese sauce and heat over low heat until gooey and smooth. Serve immediately.
