1 small, white, finely chopped
1 medium, cored, seeded and minced (do not touch seeds with bare hands)
1 clove(s), medium, minced
1¼ large, large, peeled, deveined and tails removed
3 medium, cored and diced
Fresh lime juice
2 tsp(s), minced
- Coat a 12-inch nonstick skillet with cooking spray. Add onion, jalapeno and garlic. Sauté over medium-high heat for 2 minutes. Add shrimp and sauté 1 minute, stirring frequently.
- Add tomatoes, salt and pepper. Reduce heat to low and simmer 5 minutes. Stir in lime juice and cilantro. Simmer 1 to 2 more minutes so flavors blend. Yields about 1 cup per serving.
