Juicy tomatoes and freshly squeezed lime juice give this dish a zesty flavour. Turn up the heat with a pinch of crushed red pepper flakes, if desired.

Ingredients

Onion

1 small, white, finely chopped

Jalapeño pepper

1 medium, cored, seeded and minced (do not touch seeds with bare hands)

Garlic

1 clove(s), large, minced

Uncooked shrimp

1¼ large, large, peeled, deveined and tails removed

Tomato

3 medium, cored and diced

Table salt

½ tsp(s)

Black pepper

¼ pinch(es)

Fresh lime juice

1 tbsp(s)

Cilantro

2 tsp(s), minced

Instructions

  1. Coat a 12-inch nonstick skillet with cooking spray. Add onion, jalapeno and garlic. Sauté over medium-high heat for 2 minutes. Add shrimp and sauté 1 minute, stirring frequently.
  2. Add tomatoes, salt and pepper. Reduce heat to low and simmer 5 minutes. Stir in lime juice and cilantro. Simmer 1 to 2 more minutes so flavors blend. Yields about 1 cup per serving.
