Ready in only 20 minutes, you can prepare this no-cook recipe in a snap and sit down to a clean and satisfying meal made at home. Try this over mixed greens to add more vegetables to the plate or, put out a bowl of this with some nut thins or crackers when you have guests for a conversation-worthy appetizer. If you like scallops, try having your fishmonger steam some for you and add to this dish or substitute for the shrimp.


Cooked shrimp

½ cup(s), chopped

Uncooked red onion(s)

2 tbsp(s), minced, chopped

Fresh tomato(es)

½ small, diced


½ small, diced

Fresh lime juice

2 tbsp(s)


2 tsp(s), fresh, chopped

Table salt

1 pinch, or to taste

Black pepper

  1. In a medium bowl, combine shrimp, onion, tomato, cucumber and lime juice; let stand 10 minutes for flavors to blend. Sprinkle with cilantro; season to taste, if desired.
