Try this over mixed greens to add more vegetables to the plate or, put out a bowl of this with some nut thins or crackers when you have guests for a conversation-worthy appetizer. If you like scallops, try having your fishmonger steam some for you and add to this dish or substitute for the shrimp.

Ingredients

Cooked frozen shrimp

½ cup(s), chopped

Red onion

2 tbsp(s), minced, chopped

Tomato

½ small, diced

Cucumber

½ small, diced

Fresh lime juice

2 tbsp(s)

Cilantro

2 tsp(s), fresh, chopped

Table salt

1 pinch(es), or to taste

Black pepper

In a medium bowl, combine shrimp, onion, tomato, cucumber and lime juice; let stand 10 minutes for flavors to blend. Sprinkle with cilantro; season to taste, if desired.
