Leaving the spiralized zucchini noodles raw keeps them crisp when tossed with a homemade dressing made with fresh grated ginger, nutty sesame oil, and tangy rice vinegar. When paired with roasted salmon and asparagus, this makes a great cold lunch or light dinner.

In a medium bowl, whisk vinegar, oil, ginger, salt, and pepper flakes. Add zucchini and scallions. Slice asparagus spears on an angle and add to vegetables; toss well to coat. Flake salmon into chunks and gently toss with vegetables.
