Sesame Jicama Salad

This refreshing salad gets a unique crunch from the sweet, crisp jicama. If you're not a jicama fan, use sliced, canned water chestnuts instead.


Ingredients
Uncooked jicama
¼ medium, peeled and cut into matchsticks (about 1 cup)
Snow peas
1 cup(s), cut into thin strips
Carrots
2 medium, shredded
Romaine lettuce
1 cup(s), coarsely shredded
Red wine vinegar
3 tbsp(s)
Low sodium soy sauce
2 tbsp(s)
Toasted sesame oil
¼ tsp(s)
Honey
4 tsp(s)
Sesame seeds
1 tsp(s)
Water

Instructions

In a salad bowl, combine jicama, snow peas, carrots and lettuce; toss gently.

In a cup, stir together vinegar, soy sauce, water, honey and sesame oil. Pour over salad; toss and sprinkle with sesame seeds. Yields about 1 cup per serving.
