Sesame Ginger Cabbage Salad

Think more than just iceberg when you think of salad. A mix of different cabbages makes an attractive, tasty dish.


Ingredients
Low sodium soy sauce
1½ tbsp(s)
Ginger root
1 tsp(s), finely grated
Honey
2 tsp(s)
Sesame oil
1½ tsp(s)
Apple cider vinegar
2 tsp(s)
Cooked green cabbage
1½ cup(s), shredded, thinly sliced
Red cabbage
1 cup(s), thinly sliced
Carrots
1 cup(s), peeled and grated
Raisins
3 tbsp(s)
Uncooked scallions
2 medium, white and light-green parts chopped
Instructions

In a small bowl, whisk together soy sauce, ginger, honey, sesame oil and vinegar for dressing. Set aside at room temperature.

Combine remaining ingredients and toss until well mixed. About 15 minutes before serving, pour dressing over salad and stir to combine. Set aside and stir occasionally. Yields about 1 packed cup per serving.
