Seasoned Red Snapper Baked in Packets

In the mood for Italian? Just substitute 1 teaspoon of dried oregano for the dill and 1/2 teaspoon of dried rosemary for the thyme. Perfect pesce for two!


Ingredients
Uncooked snapper fillet
8 oz, red, skinless (use two 4-oz pieces)
Cherry tomatoes
12 medium
Zucchini
1 medium, diced
Yellow bell pepper
1 medium, diced
Shallots
1 medium, minced
Fresh dill
1 tsp(s), dried
Dried thyme
½ tsp(s)
Table salt
¼ tsp(s)
Black pepper
¼ pinch(es), freshly ground
Instructions

Preheat oven to 400°F. Place a 12-inch piece of aluminum foil on a large baking sheet.

Place fish on foil and top with remaining ingredients in order listed. Fold foil to form a tightly sealed packet. Bake until fish is firm and opaque, about 15 minutes. Let stand at room temperature for 5 minutes before opening packet (be careful of escaping steam). Yields 1 fillet and about 1 cup of vegetables and sauce per serving.
