A Greek-inspired side dish that pairs nicely with roasted or baked chicken, turkey, lamb or fish, or grilled flank steak.

Ingredients

Olive oil

2 tsp(s)

Zucchini

2 medium, cut into 2-inch chunks

Dried oregano

1 tsp(s)

Fresh parsley

2 tbsp(s), fresh, chopped

Table salt

tsp(s), or to taste

Black pepper

pinch(es), freshly ground, or to taste

Feta cheese

¼ cup(s), crumbled

Instructions

  1. Heat oil in a large skillet over medium heat. Add zucchini and oregano and sauté until zucchini is golden brown, about 4 to 6 minutes. Remove from heat and add parsley; toss to combine. Season to taste with salt and black pepper. Sprinkle feta cheese over top just before serving. Yields about 125ml (1/2 cup) per serving.

Notes

Feel free to swap yellow squash for the zucchini, if you desire.
