Sauteed Zucchini with Oregano and Feta
A Greek-inspired side dish that pairs nicely with roasted or baked chicken, turkey, lamb or fish, or grilled flank steak.
2 medium, cut into 2-inch chunks
2 tbsp(s), fresh, chopped
⅛ tsp(s), or to taste
⅛ pinch(es), freshly ground, or to taste
¼ cup(s), crumbled
- Heat oil in a large skillet over medium heat. Add zucchini and oregano and sauté until zucchini is golden brown, about 4 to 6 minutes. Remove from heat and add parsley; toss to combine. Season to taste with salt and black pepper. Sprinkle feta cheese over top just before serving. Yields about 125ml (1/2 cup) per serving.
Feel free to swap yellow squash for the zucchini, if you desire.
