Something wonderful happens when you stuff hard-cooked eggs and brown them in a skillet: The filling caramelizes and forms a delicious crust, the stuffing softens and becomes more savory, and the eggs are instantly elevated to a more elegant status.

Ingredients

Cooking spray

Hard boiled egg

6 large, halved lengthwise

Light mayonnaise

1½ tbsp(s)

Chives

2 tsp(s), chopped, plus more for garnish

Capers

2 tsp(s), chopped

Dijon mustard

1 tsp(s)

Kosher salt

Instructions

  1. Remove the yolks from the egg halves and place them in a medium bowl; mash well with a fork. Stir in the mayonnaise, chives, capers, mustard, salt, and black pepper. Stuff the egg whites with the yolk mixture, and smooth with a knife.
  2. Heat a large nonstick skillet with cooking spray and heat over medium. Add the stuffed egg halves, flat side down. Cook until the filling is lightly browned and the filling is warmed through, 3 to 5 minutes. Arrange the egg halves on a platter, cut side up. Garnish with additional chives, if desired.
  3. Serving size: 2 stuffed egg halves
