Sausage & egg breakfast plate
This meal is made up of items you might find on a breakfast or brunch buffet. You can also make it for yourself at home with the right ingredients stashed in your fridge and freezer.
Mini maple apple chicken sausage

Fresh mixed greens
¼ cup(s), chopped
Light Italian salad dressing
Light cream cheese
Reduced-calorie whole wheat bread

- Warm the sausages according to the package directions. Coat a medium nonstick skillet with cooking spray and heat over medium-low. Crack the eggs into the pan and sprinkle evenly with the salt and black pepper; cover the pan and cook until the whites are cooked and the yolks are still runny, 2 to 4 minutes. (If the yolks start to cloud over, uncover the pan.)
- In a medium bowl, toss together the greens, carrots, tomatoes, and dressing. Spread the cream cheese over the toast. Arrange the salad on a plate with the toast, eggs, and sausages. Drizzle the hot sauce over the eggs, if desired.
