Raw veggies are the star in this fresh and spicy no-cook dish. Full of crunch and flavour, it’s great as a light lunch option or simple no-cook dinner on hot summer nights.

Ingredients

Red cabbage

½ head(s), medium, shredded

Zucchini

1 large, spiralized

Carrots

1 large, spiralized

Shallots

1 medium, thinly sliced

Powdered peanut butter

2 tbsp(s)

Soy sauce

2 tbsp(s)

Rice wine vinegar

1 tbsp(s)

Packed brown sugar

2 tsp(s)

Sesame oil

1 tsp(s)

Ginger root

2 tsp(s), finely grated

Sriracha hot sauce

2 tsp(s)

Instructions

  1. Toss cabbage, spiralized vegetables and shallots in a large serving bowl.
  2. To make dressing, whisk peanut butter powder, soy sauce, rice wine vinegar, sugar, sesame oil, ginger, and sriracha in a bowl until creamy and combined. Add satay dressing to vegetables, toss again to coat vegetables evenly, then serve.

Notes

Dressing can be thinned with a little water if too thick. Stir in 1 tablespoon of water at a time until desired consistency reached.
