Although we call it a supper, this main-dish salad would also make a great lunch. Simply gather a smart assortment of offerings from the salad bar for a protein- and fiber-rich meal. Or meal prep all the ingredients at home for a week's worth of lunches or dinners.

Ingredients

Mixed greens

Grilled skinless boneless chicken breast

4 oz, sliced

Cherry tomatoes

Shredded carrots

Canned drained chickpeas

Hard boiled egg

1 large, chopped or sliced

Crumbled feta cheese

Instructions

  1. On a serving plate, arrange the salad greens. Top with the chicken, tomatoes, carrots, chickpeas, egg, feta, and almonds. Drizzle with the dressing.
