Roasted vegetables are a healthy and low-calorie way to flavour your meat. Experiment with vegetables and herbs such as zucchini, scallions, rosemary and thyme.

Ingredients

Red bell pepper

1 medium, halved lengthwise, seeds and membranes removed

Onion

1 medium, peeled and sliced

Fresh oregano

1 tbsp(s), chopped

Uncooked boneless lean rib eye steak

20 oz, four 5 oz pieces

Instructions

  1. Preheat oven to 400°F (200°C). Coat a nonstick baking sheet with cooking spray.
  2. Place peppers and onions on sheet, sprinkle with oregano and bake for 12 minutes or until lightly browned. Slice pepper into strips.
  3. Grill steak until cooked to desired tenderness. Serve topped with peppers and onions.
