Roasted Pepper and Onion Steaks

Roasted vegetables are a healthy and low-calorie way to flavour your meat. Experiment with vegetables and herbs such as zucchini, scallions, rosemary and thyme.
Sweet red pepper(s)
1 medium, halved lengthwise, seeds and membranes removed
1 medium, peeled and sliced
1 tbsp(s), chopped
Uncooked boneless lean rib eye steak
20 oz, four 5 oz pieces
- Preheat oven to 400°F (200°C). Coat a nonstick baking sheet with cooking spray.
- Place peppers and onions on sheet, sprinkle with oregano and bake for 12 minutes or until lightly browned. Slice pepper into strips.
- Grill steak until cooked to desired tenderness. Serve topped with peppers and onions.
