A perennial favourite. Enjoy with roasted chicken, lean burgers, steak or eggs.

Ingredients

Dijon mustard

2 tbsp(s)

Black pepper

¼ pinch(es)

Olive oil

1 tsp(s)

Rosemary

1 tbsp(s), fresh, chopped

Fresh oregano

1 tbsp(s), chopped

Fresh parsley

1 tbsp(s), fresh, chopped

Table salt

½ tsp(s)

Uncooked potato

1 pound(s), cut into thick fries

Instructions

  1. Preheat oven to 425°F. Coat a nonstick baking sheet with cooking spray.
  2. Combine all ingredients, except potatoes, in a mixing bowl; add potatoes and toss to coat. Place potatoes on prepared baking sheet and bake, turning occasionally, until potatoes are tender but crisp, about 25 to 30 minutes. Yields about 1/4 of potatoes per serving.

Change the flavour by using any fresh herbs you have on hand.
