Roasted Cauliflower with Garlic Gremolata

For a fancier presentation, cut your cauliflower into several thick “steaks” instead of florets

Olive oil cooking spray
2 tbsp(s), chopped
1 tbsp(s), minced
- Preheat oven to 425°F. Line a baking pan with parchment paper.
- Place cauliflower on prepared pan and coat with cooking spray; season with salt and pepper. Bake, stirring once halfway through cooking, until well-browned, 30-35 minutes.
- Combine parsley, lemon zest and garlic in a small bowl; toss with cauliflower just before serving.
