This colourful, crunchy slaw is great either alongside or on top of tacos.

Ingredients

Fresh lime juice

¼ cup(s), or to taste

Kosher salt

½ tsp(s), or to taste

Uncooked red onion(s)

1 medium, thinly sliced in half moons

Uncooked red cabbage

6 cup(s), very thinly sliced (about 1 lb)

Cilantro

12 sprig(s), leaves only, finely chopped (or to taste)

Instructions

  1. Place lime juice, salt, onion and cabbage in a large bowl; use your hands to scrunch everything together until cabbage is slightly softened. Stir in cilantro; serve immediately or cover and refrigerate for up to 2 days before serving (season to taste with more lime and/or salt before serving).
  2. Serving size: 1/2 c
