Ingredients

Sesame oil

1 tsp(s)

Cooked medium grain brown rice

½ cup(s)

Frozen peas and carrots

¾ cup(s)

Cooked shrimp

3 oz, defrosted from frozen

Egg(s)

1 large egg(s)

Low sodium soy sauce

2 tsp(s), or to taste

Uncooked scallion(s)

½ tbsp(s), chopped

Instructions

  1. In a medium nonstick skillet over medium high-heat, warm oil. Add rice and cook, stirring occasionally, until heated through, 1 to 2 minutes.
  2. Add shrimp, peas, and carrots. Todd and cook until heated through.
  3. Push rice mixture to the side of pan and crack egg into the middle; scramble egg. Stir egg into the rice mixture.
  4. Transfer rice mixture to a medium bowl. Drizzle with soy sauce and garnish with scallions.
  5. Makes 1 serving.
