Sesame oil

Cooked medium grain brown rice
½ cup(s)
Frozen peas and carrots
¾ cup(s)
Cooked frozen shrimp
3 oz, defrosted from frozen
Egg
1 large
Low sodium soy sauce
2 tsp(s), or to taste
Uncooked scallions
½ tbsp(s), chopped
Instructions

In a medium nonstick skillet over medium high-heat, warm oil. Add rice and cook, stirring occasionally, until heated through, 1 to 2 minutes.

Add shrimp, peas, and carrots. Todd and cook until heated through.

Push rice mixture to the side of pan and crack egg into the middle; scramble egg. Stir egg into the rice mixture.

Transfer rice mixture to a medium bowl. Drizzle with soy sauce and garnish with scallions.
