Quick prawn ceviche

This lightning-quick dish for one can easily be scaled up for a group of any size. It also makes a great appetizer with tortilla chips or crackers.


Ingredients
Cooked prawns
4 oz, peeled, deveined, chopped
Tomato
½ small, finely chopped
Cucumber
½ small, finely chopped
Red onion
¼ small, finely chopped
Fresh lime juice
2 tbsp(s)
Cilantro
1 tbsp(s), fresh, chopped
Instructions

Combine prawns, tomato, cucumber, onion and lime juice in a medium bowl. Cover and stand for 10 minutes to allow the flavours to blend.

Add cilantro and season with salt and black pepper. Toss well. Transfer to a serving bowl to serve.
