We make this classic favourite a snap by using a prepackaged broccoli, carrot and red cabbage mix available at most supermarkets.

Ingredients

Packaged coleslaw mix (shredded cabbage and carrots)

4 cup(s), with broccoli

Tangerine

2 large, seedless, peeled and segments divided

Cooked skinless, boneless chicken breast

9 oz

Radishes

½ cup(s), sliced, sliced

Tangerine juice

cup(s), freshly squeezed or store bought

Honey mustard

2 tbsp(s)

Jalapeño pepper

1 small, seeded and minced

Vegetable oil

1 tbsp(s)

Table salt

¼ tsp(s)

Instructions

  1. Place broccoli slaw, tangerines, chicken and radishes in a large salad bowl; set aside. Combine remaining ingredients and pour over salad; toss to coat. Yields about 2 cups per serving.
