The basic ingredients in a barbecue sauce are pretty simple: a generous dose of ketchup, smaller amounts of vinegar, and a selection of flavourings. Here we use apple cider vinegar and brown sugar to develop a rich, complex flavour; cumin and paprika add a twist to what you’d find in a traditional barbecue sauce. For this recipe, you separate the dry rub and the liquid glaze, which helps you avoid any burning or flare-ups while still delivering all the flavour you’d expect. And best of all, it takes only about 10 minutes to cook.

Cooking spray

Packed brown sugar

Garlic clove

2 clove(s), medium, minced

Paprika

1½ tsp(s), smoked variety

Ground cumin

Uncooked boneless skinless chicken breast

30 oz, 6 (5-oz) cutlets

Instructions

  1. Off heat, spray grill rack with cooking spray. Preheat grill to medium or prepare medium fire.
  2. To make glaze, stir together ketchup, vinegar, brown sugar, and garlic in small bowl.
  3. To make spice rub, mix together paprika, cumin, salt, and pepper in another small bowl. Rub spice mixture all over chicken.
  4. Place chicken on grill rack and grill, turning often, until cooked through, about 10 minutes. Brush chicken on both sides with glaze and grill 1 minute longer.
  5. Serving size: 1 chicken cutlet
