Quebec Candlemas Crepes

2 large, beaten
Fat free skim milk

- In a medium bowl, sift flour, baking powder, baking soda and salt. Add eggs and melted butter. Then add milk, a little at a time and beat until smooth and lumps disappear.
- Prepare an 8” skillet with cooking spray and heat over a medium to medium-high heat. Add about ¼ cup of batter and tilt the pan so the batter covers the bottom. Cook for about 2 to 3 minutes (bubbles will appear on the surface), then flip the pancake over and cook for another 2 to 3 minutes. Repeat until all the batter is used up. Top each pancake with maple syrup
