Pumpkin pie, meet morning oatmeal! Steel-cut oats and pumpkin seeds add great texture, and mild honey lends just enough sweetness. For the freshest flavor, grate your own nutmeg.

Ingredients

Pumpkin puree

3 cup(s), (not pie filling)

Uncooked steel cut oats

1½ cup(s)

Honey

½ cup(s)

Ground cinnamon

1 tsp(s)

Table salt

½ tsp(s)

Ground nutmeg

¼ tsp(s)

Orange

4 medium, segmented

Green pumpkin seeds (pepitas)

½ cup(s)

Instructions

  1. In a 4- or 5-qt slow cooker, stir together 6 cups water, pumpkin, oats, honey, cinnamon, salt, and nutmeg until well mixed. Cover and cook until oats are tender, about 8 hours on Low; stir well.
  2. Divide evenly among 8 bowls. Top each serving with about 3 orange segments and 1 tbsp pumpkin seeds. (The oats can be cooled and refrigerated for several days. Gently reheat in a microwave or on the stovetop, adding a little water to loosen oat mixture.)
  3. Per serving: 1 cup oatmeal, 3 orange segments, and 1 tbsp pumpkin seeds
