Old-fashioned oats get cooked with mashed banana for natural sweetness, and creamy cottage cheese is stirred into the porridge at the end for supreme creaminess and a protein boost.

Ingredients

Banana

½ small

Uncooked old fashioned oats

½ cup(s)

Ground cinnamon

¼ tsp(s)

Table salt

1 pinch(es)

Fat free cottage cheese

¼ cup(s)

Strawberries

¼ cup(s), quartered

Shelled pistachio nuts

1 tbsp(s), chopped

Instructions

  1. In a small saucepan, mash the banana. Stir in 1 cup of water and bring the mixture to a boil. Stir in the oats, cinnamon, and salt; reduce the heat to medium-low and cook until the oats are tender and creamy, stirring occasionally, 4 to 5 minutes. Remove the pan from the heat and stir in the cottage cheese. Pour the oats mixture into a bowl; top with the berries and pistachios.
