This rich and chunky chowder is the next-best thing to being wrapped in a warm quilt. Canadian bacon makes all the difference.

Ingredients

Uncooked potato

2 cup(s), cut into 1/2-inch cubes

Carrots

1 large, diced

Uncooked leek

1 cup(s), chopped, white part only

Garlic

1 clove(s), large, minced

Fat free chicken broth

4 cup(s)

Uncooked pearl barley

½ cup(s), pearl

Dried thyme

¼ tsp(s)

Black pepper

¼ pinch(es)

Cooked Canadian-style bacon

4 oz, cut into 1/4-inch pieces

Bay leaf

1 tsp(s), crumbled or 1 whole leaf

Fat free evaporated milk

½ cup(s)

Fat free creamer

2 fl oz, such as fat-free 1/2 and 1/2

Instructions

  1. In a slow cooker, combine potatoes, carrots, leek, garlic, chicken broth, barley, bay leaf, thyme, pepper and Canadian bacon. Cover and cook on low for 6 hours or until vegetables and barley are tender.
  2. Stir in evaporated milk and half-and-half and heat through uncovered, about 10 minutes. Yields about 1 1/4 cups per serving.
