Poppin' Pineapple-Jalapeño Mocktail

Sweet pineapple and sunny orange juice take this cocktail in a tropical direction, while jalapeño pepper adds alluring heat and “green” flavour notes. For more heat, use all of the pepper; for a mild flavour, use just 1 or 2 slices. Be sure to take your time when muddling the pineapple in step 1 so that you release as much juice and sweetness as possible.
1 medium, cut into 4 wedges
⅛ cup(s), (2 chunks)
1 medium, sliced and divided
½ cup(s), diced
Fresh orange juice
Unsweetened flavoured seltzer
⅔ cup(s), sliced and divided
- Thread 2 orange slices, 1 pineapple chunk, and 1 pepper slice onto each of 2 (4- to 8-inch skewers). Place the diced pineapple and remaining pepper slices (or fewer, if desired) in a 2-cup glass measuring cup. Using a muddler or wooden spoon, smash the fruit into a thick paste; discard the pepper slices.
- Stir the orange juice and seltzer into the measuring cup. Divide the mixture evenly between 2 ice-filled glasses. Garnish with the fruit skewers.
