A classic Japanese citrus-flavoured sauce great for dipping, dressing, or marinating a variety of dishes and meats. Ponzu can be made without the addition of soy sauce but is commonly prepared with soy included, which we have provided here.

Ingredients

Mirin

4 fl oz

Unseasoned rice vinegar

2 tbsp(s)

Kombu

2 sheet(s)

Eden Bonito Flakes

5 tbsp(s)

Fresh lemon juice

2 oz

Fresh lime juice

2 oz

Low sodium soy sauce

4 oz

Instructions

  1. In a small pot, combine mirin, rice vinegar, and kombu. Bring to a simmer and remove from the heat. Stir in the bonito flakes, cover, and let steep for 10 minutes
  2. Strain the liquid in a fine mesh-strainer and discard the solids. Allow liquid to cool completely
  3. Combine the steeped mirin/vinegar liquid with the lemon juice, lime juice, and soy sauce. Store in a sealed container in the fridge
  4. Yield: Approximately 1 1/4 cups. Yield will serve 10 people 2 tbsp (15ml) each
