Ounce for ounce, sweet potatoes have the same number of calories as white, but with a good helping of vitamin A and beta-carotene.

Ingredients

Uncooked potato

2 medium, washed

Table salt

tsp(s), or to taste

Black pepper

pinch(es), or to taste

1% low fat cottage cheese

¼ cup(s)

Fat free salsa

¼ cup(s), chunky

Instructions

  1. Preheat oven to 400°F (200°C). Coat a baking sheet with cooking spray. Cut potatoes into wedges, leaving the skin on. Lightly spray wedges with cooking spray and season to taste.
  2. Bake until golden brown, about 40 to 60 minutes, turning after 20 minutes.
  3. Top with cottage cheese and salsa.
