Poached Pears in Port Wine

An elegant way to finish a meal, these spicy pear are simple to make. Use a firm pear, like Bosc.


Ingredients
Cinnamon sticks
1 average
Orange
1 medium, juice and zest julienne
Lemon
1 medium, juice and zest julienne
Mineral water
¾ fl oz
Sugar
6½ tbsp(s), (turbinado)
Pear
6 small, peeled with ¼
Dry dessert wine
5 fl oz

Combine cinnamon stick, orange juice and zest, lemon juice and zest, water and sugar in a 4 to 6 quart pot (big enough to fit six pears), and bring to a simmer, stirring constantly, until sugar dissolves. Remove from heat.

Stand prepared pears in the syrup and add the port wine. On a low heat, bring pears to a simmer and cover. Cook for approximately 35 minutes until pears are tender but not mushy. Remove pears with a slotted spoon. Turn the heat up to medium-high and boil sauce until it is reduced by about 50%, about 5 minutes. Pour sauce over pears and cool.
