Making perfectly fluffy white rice is easier than you think. And you don’t need a rice cooker… just your favorite saucepan. Cooked rice isn’t just good as a side; you can add it to soups, stews, or braises or use it as a base for a quick fried rice dish. You can also whip up a hearty rice salad by stirring in parsley, halved cherry tomatoes, and cooked shrimp or diced chicken or turkey breast.

Bring water and salt to boil in small saucepan. Add rice and stir to separate grains. Reduce heat and simmer, covered, 18 minutes. Remove saucepan from heat and let stand, covered, 5–10 minutes or until ready to serve. Fluff with fork just before serving. Makes 3 cups.
